Roasted Cauliflower for the Veggie Bowl

Basically, Cauliflower is a favorite for many. Especially in veggie bowl, not only it adds the aroma but also gives the color and healthy meal. Cauliflowers are more delicious when it is roasted and spiced with various cooking method. With the mixture of Veggies, nourishing spices, rice along with Cauliflower, is seriously a mouth watering bowl. It can suits your tummy both for the lunch or dinner.

The Veggie bowl will be awesome with any kind of veggies you have it around like Carrot, Broccoli, Tomato, Pumpkin, Egg Plant, Sweet Potato and Zucchini.

The preparation time will not take more than 15 minutes and cook time will be around 40 minutes.

For Roasted Turmeric Cauliflower

  • Cauliflower – 350 g
  • Turmeric powder – 1 tsp
  • Cumin powder    – 1/2 tsp
  • Sesame seed      – 2 tsp
  • Oil for roasting
  • Salt and Pepper to taste

For Veggie Bowl

  • Uncooked Rice   – 1/2 cup
  • Beans               – 1 cup
  • Cherry tomatoes – 1 cup
  • Carrot                –  1 or 2
  • Zucchini             – 1
  • Leafy greens       – 1 cup
  • Oil
  • Salt and Pepper to taste

Veggie Bowl

Preparation

  • Cook the rice in your own cooking way.
  • In a bowl, add chopped cauliflower florets, oil, sesame seeds, cumin powder, turmeric powder, salt and pepper. Mix it for evenly coated and keep aside.
  • Chop Zucchini, carrot, beans, cherry tomatoes on your favorable size and toss little oil with salt and pepper spread on veggies.
  • In a tawa, add all the above veggies and cauliflower mixture and roast in a medium flame  for 10 -15 mins depending on the size of the veggies.
  • For leafy greens, no need of roasting and can be added directly at the time of serving.
  • And for dressing the veggie bowl, add 1 tbsp honey and 2 tsp lemon juice.
  • To add more flavor to it, don’t forget to garnish the bowl with coriander leaves and chilli flakes.  Enjoy the veggie bowl with

Once rice and all the vegetables are cooked, divide everything evenly between two bowls. And for dressing the veggie bowl, add 1 tbsp honey and 2 tsp lemon juice.

To add more flavor to it, don’t forget to garnish the bowl with fresh herbs, nuts, coriander leaves and chilli flakes.
